Since the undotted letters appear certain, there seems no other way to take this than the name Hermes, even though we should not expect a name by itself in the nominative. The name need occasion no surprise: there are other Greek names in the tablets and Hermes occurs in RIB I 195 (from Colchester); a further eight examples of Hermes are cited in NPEL from Gallia Belgica.
